Long before the railroads were built, millions of people journeyed across the Great Plains into the rugged western mountains on foot, horseback or in wagon trains.  Some where families looking for homesteads, other were trappers, cowboys or prospectors.  The Rocky mountains were,. and still are, a hunter's paradise and generations of hunters' wives have developed ingenious ways of tenderizing and flavoring venison, elk and antelope steaks and roasts.  The abundance of fish and game lends a special zest to the cooking of the Mountain States. 
    No visitor in hunting season should consider his stay complete until he has sampled the area's Roast Venison, Braised Antelope or Canvasback Duck.  Game Mulligan and Jungle Stew are savory concoctions fit for a king.  Idaho, of course is potatoe country but carrots are also popular throughout the region.  Besides the usual carrot recipes there is Carrot Pie, Carrot Pudding, Idaho's Sunset Salad and Utah's Sunshine Salad.  The latter are molded gelatin salads which include carrots and pineapple in their recipes.
    The Mormons in Utah, among other culinary pleasures, are famous for their biscuits and gravy and the ever-popular Mormon Stew, an oven-baked dish with tomato and eggplant base.  The Denver Sandwich, a concoction of diced ham, onions and eggs served up on bread, is magnificent;  and you haven't lived until you have tried Eggs Reno-Style --- eggs baked in scooped out green peppers.
